Simple Baigan Masala (Brinjal Spice)

Hi,

This is the first time I am posting a recipe on my blog. This is simple, home made baigan masala without much addition to it.  The ingredients and all are very simple and easily available. I hope you love it.


Ingredients:
  • Brinjals/Aubergine diced (Pick the tender ones which has less seeds or has not matured)
  • A cup of fresh peanuts/groundnuts
  • 3 cm fresh Ginger (Half the size of your thumb)
  • 1 bulb of garlic
  • 5-6 curry leaves
  • 2 Onion diced
  • 1 Tomato diced
  • 1/2 tbsp turmeric powder
  • 2 tbsp Red Chili Powder (You can also use fresh Red chillies, taste will differ)
  • 2 tbsp coriander powder (You can also use fresh coriander, taste will differ)
  • 2 tbsp Garam Masala (You can get it on Walmart, Amazon, etc)
  • Salt (As required)
  • 3-4 tbsp groundnut oil or Olive oil (Try in different types of oil, it will give different taste)

Preparation of Spice:
  • Grind Peanuts, ginger and garlic (also add Red chilies and coriander if fresh ones are used)
  • Add Red chili powder, Turmeric Powder, Coriander powder, Garam masala
  • Add a bit of water and make a thick paste
  • Tip: Use of Mortar and Pestle to grind, it will give a different and rich taste.

Directions:
  • Heat oil in a pan
  • Add curry leaves, diced Onions and Tomatoes and stir until the onions are golden and tomatoes are soft
  • Add the Spice and salt (as required) stir well, until you get good aroma of spices.
  • Now, add the diced Brinjals/Aubergine and mix them will with the spice paste. Cook for around five minutes by constantly stirring.
  • Add a cup of water, mix well, cover the pan with lid and let it simmer for 10 minutes or until it is cooked.
P.S.: Making Roti/Indian Flat bread is difficult and also needs years of practice to make. But you can have it with any bread of your choice or with steam or boiled rice.
